I clipped this recipe from a food magazine years ago but forgot to write down the exact source. Enjoy.
Chocolate Ginger Cake
- 2 cups all-purpose flour
- 3/4 cup sugar
- 3 tablespoons unsweetened cocoa powder
- 4 teaspoons ground ginger
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 cup apple juice
- 3 tablespoons vegetable oil
- 1 teaspoon apple cider vinegar
Sift flour, sugar, cocoa powder, ginger, baking soda, cinnamon, and salt into a large bowl. Whisk juice, oil, and vinegar in a medium bowl to blend. Add to the dry ingredients; stir just until moistened. Spoon the batter into the prepared pan. Using a spatula, smooth the top.
Bake until the cake begins to pull away from the sides of the pan and tester inserted into the center comes out clean, about 30 minutes. Transfer the pan to a rack and cool.
Using a knife, loosen the sides of the cake from the pan, invert, remove the parchment, and place right-side-up on a serving platter. Sprinkle with powdered sugar and cut into wedges.
I'll sprinkle this with powdered sugar later, and I plan to serve it with sliced strawberries and whipped cream.
