Frozen vegetables can equal or better the quality of fresh,
especially vegetables that lose flavor and tenderness rapidly after
harvest. These include green peas, Lima beans, and sweet corn.
I am a huge fan of Harold McGee, who is well known for his On Food and Cooking, an awesome resource of kitchen science. I cannot wait for his new book to be published (October), and if you come back here on October 16, you'll get the full review.

ReplyDeleteI never shop at Farmers Market, Why? To many friends give me fresh veggies out of their gardens this time of the year. Interesting quote from the book.

We have great Farmers Markets down here but I never go because it is a bit of a hassle. Something like this might inspire me though. I will look forward to the review!

ReplyDeletenever thought about avoiding those veggies in the sun at farmer's markets...but I do agree with him about the superiority of many frozen veggies. peas and corn for sure, unless you are picking them from your own garden and eating it once.

ReplyDeleteI really really really want to read this! I shop at farmers markets all summer long. I think the produce is snapped up quickly enough that it really doesn't have time to sit out very long. But I'll remember that tip. Must look for this guy's books!

ReplyDeleteI'm not much of a cook (I'm a much better eater!), so I don't read many foodie-type books, but I'm a fan of anyone who tells me it's OK to use frozen foods! Love this teaser - sounds like a great book.

ReplyDeleteSo happy to know that corn can be just as good frozen! It's one of the few vegetables I can tolerate frozen.
