Weekend Cooking: Chocolate Ginger Cake

One of the problems joys of being known as a good baker is that you are often asked to bring dessert when friends invite you for dinner. This chocolate spice cake is easy to make and is perfect for a small, casual get-together.

I clipped this recipe from a food magazine years ago but forgot to write down the exact source. Enjoy.


Chocolate Ginger Cake

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 3 tablespoons unsweetened cocoa powder
  • 4 teaspoons ground ginger
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup apple juice
  • 3 tablespoons vegetable oil
  • 1 teaspoon apple cider vinegar
Preheat the oven to 350F. Spray a 9-inch round cake pan with 1 1/2-inch-high sides with vegetable oil spray. Line the bottom of the pan with parchment.

Sift flour, sugar, cocoa powder, ginger, baking soda, cinnamon, and salt into a large bowl. Whisk juice, oil, and vinegar in a medium bowl to blend. Add to the dry ingredients; stir just until moistened. Spoon the batter into the prepared pan. Using a spatula, smooth the top.

Bake until the cake begins to pull away from the sides of the pan and tester inserted into the center comes out clean, about 30 minutes. Transfer the pan to a rack and cool.

Using a knife, loosen the sides of the cake from the pan, invert, remove the parchment, and place right-side-up on a serving platter. Sprinkle with powdered sugar and cut into wedges.

I'll sprinkle this with powdered sugar later, and I plan to serve it with sliced strawberries and whipped cream.

    I am going to have to do something about getting my oven mixed so I can try some of the delicious recipes that people have been putting up.

  2. Chocolate and ginger, mmm, sounds like a very tasty combination, although I haven't tasted it before myself. Would a chocolate icing add anything to this warming cake? Though I wouldn't say no to icing sugar, whipped cream & strawberries ;)

  3. Sounds good and I like that it makes a smaller cake. All too often I'm left with big ones and either end up eating the entire cake or pitching it. Either way -- not good.

  6. I have a weakness for spice cakes of all kinds. One of the things I love about this one is that, like Julie mentions, it makes a small cake so there are aren't days of leftovers. It's lovely with just the powdered sugar -- the whipped cream, though is pretty and tasty.

  14. There is a candy store we go to in Maine that makes crystallized ginger dipped in dark chocolate. Heaven!!

  15. As others have said, I like the idea of ginger and chocolate together. I'm curious enough to give it a try. I also like having a handy cake recipe that I can easily fix as a take along dish. It helps if it's something unique like this one. Thanks for sharing.

  16. I've heard of chocolate and cinnamon together but not ginger. Very interesting. And apple cider vinegar? Maybe I'd leave that out. ;<) I've saved it and will definitely make this cake. Thanks, Beth. No special cooking to share this weekend, so I'll just go and read everyone else's.
