It's so true about recipes. I do try to stick to them as much as I can the first time within reason (especially when testing them of course) but I seldom make a recipe exactly as it is printed. You have to taste and adjust and tweak things to fit the ingredients you have on hand, taste preferences and health needs but to me that is the fun of cooking.
